Sift the spices from the flour. Mix the flour, water and oil and knead for at least 10 minutes to a smooth dough. If it feels too dry, add a little extra water. Let the dough rise for 1 hour in a warm slightly moist place. Press the air out of the dough and place the slice on the baking sheet. Let it rise for another 30 minutes and preheat the oven to 225 degrees. Knead the tomatoes and onion through the dough. Brush with olive oil and sprinkle with herbs to taste. Bake the bread for 15 to 20 minutes.
